CHOCOLATE CHIA SEED PUDDING
This can be a no-cook breakfast or sweet treat.
- 1 - 14 oz can coconut milk
- 1⁄3 cup chia seeds
- 1⁄4 cup maple syrup
- 3 Tablespoons cocoa powder
- 1 teaspoon vanilla extract
- 1⁄4 cup coconut flakes
- Raspberries or blueberries (optional for topping)
- In a 1 quart sized bowl, combine all ingredients (except berries).
- Whisk together and chill for at least 3 hours.
- Serve into bowls and top with berries.
