CHOCOLATE CHIA SEED PUDDING

This can be a no-cook breakfast or sweet treat.

Ingredients

  • 1 - 14 oz can coconut milk
  • 1⁄3 cup chia seeds
  • 1⁄4 cup maple syrup
  • 3 Tablespoons cocoa powder
  • 1 teaspoon vanilla extract
  • 1⁄4 cup coconut flakes
  • Raspberries or blueberries (optional for topping)

Directions

  1. In a 1 quart sized bowl, combine all ingredients (except berries).
  1. Whisk together and chill for at least 3 hours.
  1. Serve into bowls and top with berries.
